Sobremesa on the Silk Road: Uzbekistan's Plov Season Begins

The first cold morning in Bukhara arrives without warning. Yesterday the courtyard was still warm enough for tea in shirtsleeves. Today there is steam standing above a cast-iron kazan, the smell of cumin and lamb fat rolling out under the plane trees, and a man in his seventies turning rice with a skimmer the size of an oar. Autumn in Uzbekistan does not begin on a calendar. It begins when the plov comes back.

From September to November, the oasis cities that spend all summer hiding from the heat step outside again. The carrots are new. The quinces are hard and gold. The garlic is fat, the pomegranates split in the bazaar, and the rice from the Fergana Valley has just come down from the fields. This is plov season on the Silk Road, and for travellers from Spain and Latin America it may be the most unexpectedly familiar season in Asia.

Sobremesa, but on the Silk Road: why viajes a Uzbekistán feel like home

Spanish has a word most languages lack: sobremesa, the hour after the plates are cleared when nobody stands up. Uzbek has its own version, and it is older. It is called the dastarkhan — literally the cloth spread on the table, but in practice the entire social contract of the meal. Bread is never cut with a knife, only broken by hand. Tea is poured back into the pot three times before it is served. The first cup is deliberately small, because a small cup means the host wants to fill it again, and again, and keep you there.

Guests arrive at a Samarkand courtyard house expecting a lunch and leave four hours later having discussed weddings, rainfall, grandchildren and the correct thickness of a carrot. Nobody looked at a phone. That is the part travellers write home about — not the domes.

What plov actually is, and why UNESCO put it on a list

In 2016 UNESCO inscribed "Palov culture and tradition" on its Representative List of the Intangible Cultural Heritage of Humanity, recognising it not as a recipe but as a social practice. Every region cooks it differently and every region is certain it is right. Bukhara leans sweet, folding in raisins and dried apricots, and also produces bakhsh, a startling green plov coloured with herbs. Samarkand layers its plov rather than mixing it, leaving the rice pale and the carrots whole on top. Tashkent makes it darker, heavier, built for winter.

The country is now putting this on the map in a literal sense: Uzbekistan's digital gastronomy mapping project, launched in Samarkand, has been extended through 2026 to Tashkent and Bukhara, documenting home kitchens and plov houses that never appeared in a guidebook. For a food-led trip, the timing has never been better.

Ruta de la Seda in autumn: the practical case

Autumn is simply the best-built season here. Daytime temperatures in Samarkand and Bukhara settle into the low-to-mid twenties Celsius, the light goes long and gold across the tilework in the late afternoon, and the bazaars are at their fullest of the whole year. Uzbekistan is visa-free for citizens of more than ninety countries, including Spain, Mexico, Argentina, France and the whole of the EU and UK, so for most travellers the paperwork is a passport and nothing else.

Interest is following. Official figures reported this month put arrivals at more than nine million foreign visitors in the first eight months of 2026, over twenty percent up year on year — which is the polite way of saying that the quiet years are ending. The high-speed Afrosiyob trains now link Tashkent, Samarkand and Bukhara in hours rather than days, so a food-focused route no longer costs you the road.
